Oats and Honey Granola

Crispy and flavorful, this granola is sweetened with dates and honey. Granola is such a “whole” meal, just add some fresh fruit and milk to start your day with a good source of protein and whole grain.  For a special and tasty winter morning option, eat it with dried raisins or craisins and diced apples.

Oats and Honey Granola

Servings – 12 cups
Prep Time – 20-30 minutes
Bake Time – 6-8 hours

Ingredients:

Dry Ingredients:

6 cups quick oats

1 cup wheat germ

1/2 cup flaxseed meal

1 cup chopped walnuts

1 cup sliced almonds, opt.

1 cup unsweetened macaroon coconuts

1 teas salt

 

Wet Ingredients:

1/2 cup unsweetened applesauce

1/2 cup soft dates, cut up, press down to measure

1/3-1/2 cup honey or liquid sweetener of choice

1/3 cup mild olive oil

1 1/2 tbsp vanilla

1 tbsp orange juice concentrate

1/2 tsp almond extract


Instructions:
  1. MIX all dry ingredients together in a large mixing bowl.
  2. COMBINE the wet ingredients in blender and WHIZ until smooth.
  3. ADD blended ingredients to dry.
  4. MIX well, rubbing between the palms of your hands if necessary.
  5. SPREAD evenly on a large cookie sheet with sides.
  6. BAKE at lowest oven setting for approximately 6-8 hours–no stirring required! The first time you might want to make it when you can check the process. It may be necessary to crack the oven door with a wooden spoon to keep from burning–depends on oven.

Notes:

Once the granola is mixed, if you wish, you can put half in the freezer in a sealed container and bake it at a later date.
