Crispy Sesame Candy

This crispy, fun, gluten-free treat is liked by young and old; it is easy to make and even easier to eat!  The coconut and seeds add much flavor and a good amount of fiber.  The honey and that splash of vanilla just top it off.

The salt could be omitted if you are using a highly salted nut butter.  Store them in a sealed container in the fridge for the best texture.  If you desire to replace the honey with syrup or the peanut butter with almond butter, the candy will not be as firm, but it will still be delicious.

Crispy Sesame Candy

Servings – 32 (1 1/4" pieces) 
Prep Time – 10 minutes 
Passive Time – 1-2 hours

Ingredients:

1 cup brown rice crispies

1 cup raw hulled sesame seeds

1 cup unsweetened macaroon coconut

3/4 cup old-fashioned peanut butter-omit the salt if nut butter is salted

1/2 cup quick oats

1/2 cup dairy-free chocolate chips, cacao nibs or carob chips

1/2 cup honey

1 teaspoon vanilla

1/2 teaspoon salt, opt.


Instructions:
  1. Combine all but the honey, vanilla and salt in a bowl sufficient for mixing and set aside.
  2. In a separate small bowl, blend together the honey, vanilla and salt. Add to the dry ingredients and mix thoroughly
  3. Spoon into a 7 x 11 inch or equivalent-sized dish, pressing firmly down until it is glossy on top and smooth. Using a baggie as a “glove” for that process works well.
  4. Slice the candy into squares before chilling, and then chill before serving.   Store in a sealed container in the refrigerator.
