TIPS FOR AVOIDING A SOGGY BOTTOM PIE CRUST
- Bake the pie on a lower rack.
- Preheat a cookie sheet on the rack to be used & place your pies on that for baking, letting it heat up along with the oven.
- If your pie does not require a top crust, you can bake it blind for 8-10 minutes at 350 before adding your filling; be sure and cover fluted edges.
- Make a thicker crust for the bottom layer.
- Sprinkle a layer of bread or cereal crumbs over the bottom crust before filling with a fruit filling.
- Brush the bottom crust with a barrier that will seal it. — a gel of cooked cornstarch and water. One starch to three of water.
- Most importantly, always preheat your oven and put the pie directly into the oven as soon as you fill it.
