Soy curls are a single ingredient food made from the whole soy beans. Healthy and very versatile. They have wonderful texture making them different from tofu. Like tofu you can season them any way you choose with a beef flavor, chicken flavor, etc. You can make them into a ground meat substitute by crumbling and hydrating in the appropriately flavored marinate. You can leave the pieces large, break them up in shorter lengths or chunks, or you can cut them once they are dehydrated.
To hydrate them mix whatever seasonings you are choosing to use with enough boiling water to cover and allow for them expanding. Add the soy curls and set aside for 10-15 minutes (or more), stir from time to time, making sure they remain submerged under the water. When a recipe calls for using them, the first thing I do is prepare them in a marinade and proceed with the recipe while they hydrate.
