These healthy, delicious waffles pack a lot of protein–a great way to start the day. Our bodies use protein more efficiently in the morning than at any other time, so enjoy! The combination of almonds, flax and oats makes them light and delectable. There are no added sugars as it really is an unnecessary evil since waffles are usually served with syrups or fruit toppings–we recommend the fruit.
We like to layer them by spreading with nut butter, banana slices, and a fruit topping such as apple, blueberry or strawberry.
This waffle recipe requires a blender that can thoroughly blend 5+ cups of ingredients.
2 3/4 cups cold water
2/3 cup raw almonds–-if your blender is not real powerful, you can use cashews
2 cups rolled oats
3 tbsp flax seeds
2 tbsp applesauce or a couple 1/4″ slices of apple
1 teas vanilla
1/2 teas salt
*Nonstick waffle irons that have never been sprayed with food release spray cook nicely without the batter sticking. Temper once and they should be good to go, but if your waffle iron requires non stick spray, do what you know is best; batter stuck in a waffle iron is a messy situation!
