Apple-Maple Oat Bake

Servings – 4 Prep Time – 10 minutes Cook Time – 40 minutes
Ingredients:

 

1 cup quick or regular oats for GF use gluten-free oats

1 peeled sweet apple, grated or diced 1/4″ Fuji & Honey Crisp are especially good

1 1/2 cups soy or almond milk

2 tbsp pure maple syrup

1 tsp vanilla

1/4 tsp salt

1/2 cup chopped walnuts

 

Instructions:
  1. Combine all ingredients except for the nuts in a one-quart baking dish.
  2. Sprinkle nuts evenly over oatmeal mixture.
  3. Bake at 350° for 40-45 minutes or until set. The time will depend on how deep your dish is.
  4. Serve warm with milk as you would cooked oatmeal.
Notes:

I chop or grind about 2 quarts of nuts with my food processor and store them in my fridge to keep them fresh.  This saves a lot of time when it comes to preparing dishes.  Chopping a lot takes about the same time as chopping a few, and you only have to do it once a month or so depending on your cooking needs.  For this particular recipe I like them rough chopped, unlike most other times, so I just use a big knife and do it on the same chopping board I used for cutting the apples.
