| Ingredients:
1 1/3 cups soy milk or nondairy milk of choice — the richer the better 2 tbsp finely ground golden flaxmeal 2 tbsp of honey is my preference, but any liquid sweetener should work. 1 cup steamed or baked* sweet potato — mash just enough to press into measuring cup to measure. 2 tablespoons extra virgin olive oil 1 tablespoon active dry yeast
4 1/4 cups white whole-wheat flour, divided — stir well before measuring, level off top 1 1/2 tablespoon vital wheat gluten 1 1/ 2 teaspoons salt 1/8 tsp citric acid |

*I prefer them baked until gooey sweet, but a soft steamed one would work just fine. — probably also a canned one, although I have not tried it. |
