Chunky Cucumber-Avocado Salsa

Servings – 4 (1/2 cup) Prep Time – 10 minutes
Ingredients:

1 cup cucumber, diced 1/4″

1/4 cup sweet red pepper, diced 1/4″ –may replace with tomato

2 Tbsp green onion, sliced 1/4″ slices

3/4 teas coarse-grain garlic salt

1/8 teas salt

1 1/2 teas fresh lemon juice

1/2 cup avocado, diced

 

Instructions:
  1. Combine the cucumber, pepper and green onion.
  2. Sprinkle with seasonings.
  3. Carefully fold in the diced avocado with the lemon juice.
  4. Serve with crackers, chips, toasted whole-grain baguettes, pita chips or butter lettuce cups.
