Lemon-Ginger Dressing

This delightful fat-free and sugar-free dressing is easy to make and freezes well.  It is the star of the Leafy Holiday Salads.  I like to make up a double batch or two and keep it in my freezer to avoid extra work at the last minute on the holiday.

Lemon-Ginger Dressing

Servings: 1 cup
Prep Time: 10 minutes
Chill Time: 2 hours

Ingredients:

1/3 cup + 2 tbsp very hot water

2 tbsp crystallized ginger

2 Medjool dates, pitted

1/4 cup peeled sweet orange –diced to measure

3/4 tsp salt

2 tsp grated lemon rind

2 tbsp lemon juice


Instructions:
  1. Soak ginger and dates in hot water while you grate lemon zest, squeeze lemons, and cut the rind and all the pith from the orange you will be using.
  2. When ginger is softened, pour with the dates and water into your blender’s cup and add the remaining ingredients. Blend until all is smooth as cream. This may take a minute or two depending on the quality of your blender.
  3. Store in a covered container and chill, or if not using soon, keep in the freezer.
