This is my favorite time of year, now through fall. We live in a valley of fruit trees and an abundance of fresh vegetables. I regularly cook beets year around, but the fresh ones grown around here are wonderfully sweet and delicious. I have never enjoyed that they can spit bright red juices during their lengthy cooking process, and really appreciate these two full-proof hands-off ways of cooking that make it so much simpler.
1: Individually wrap each beet in foil and bake in the oven as you would a potato. Even non-beet lovers can appreciate this one.
2: Steam the beets in your Instant Pot; so simple and fool proof. Times can be easily found on the internet for different sized beets.
