Almond-Maple Cookies

These almond-maple cookies started out to be for those folk who are gluten-free; however, they are so delicious everyone else loves them, too! As you can see, they only have three ingredients!  I would say they are more of a confectionery. But whether you call them candy or cookie, they are good.

When they are completely cooled, if you are not using them right away, put them in a freezer container and freeze them--that way they will be nice and fresh when you do serve them, retaining their original crispness.  Be sure and remove them from the container before you defrost them.

Almond-Maple Cookies

Servings – 2 dozen
Prep Time – 10 minutes
Cook Time – 12-15 minutes

Ingredients:

3/4 cup coarsely chopped almonds or 3/4 cup sliced almonds crushed – I prefer the sliced as they are easier to work with

3 tbsp almond flour

1/4 cup real maple syrup

1/4 tsp vanilla


Instructions:
  1. Preheat oven to 325°.
  2. Combine vanilla and syrup, and stir into nuts and almond flour.
  3. Spoon in 1 1/2 teaspoon amounts onto parchment-lined cookie sheet. Press lightly to flatten–may need to dampen fingers.
  4. Bake 12-15 minutes or until edges are slightly browned.
  5. Remove from oven and slide parchment onto cooling rack. Cool completely before carefully removing cookies.
